Green stuffed Raj Kachori

Semolina - 1 bowl, wheat flour - 1/4 bowl, baking soda - a pinch, salt - according to taste, spinach - 1 bowl, boiled, PCI, oil - for frying.

Kabuli chana - 1 bowl boiled, sprouted peanuts - 1 bowl, cottage cheese - 1 bowl, a tomato puree, butter - 1 tablespoon, cashews - 1/2 bowl chopped, black salt - as per taste, plain salt, roasted cumin powder , Chaat masala - as per taste, sweet curd whipped, sweet chutney, green chutney - garnish, finely chopped and coriander - a little bit chopped.
Mix semolina, flour, salt, soda well. Knead the flour with the spinach puree. Knead by adding some water if needed. The dough should be soft as semolina absorbs water. Now cover it and keep it for fifteen minutes.
For the filling, heat the butter in the pan. Add tomato puree and fry it on high heat. Add Kabuli gram, paneer, cashew nuts and sprouted moong dal. Fry salt, roasted cumin powder, black pepper powder for 2-3 minutes and remove from heat. Heat oil in pan. Make a small portion of spinach flour and roll out the puris. Fry all the pooris on medium heat till they harden in hot oil.
Keep the poori in a plate while serving. Break the middle part and fill it with stuffing. Add yogurt, sweet chutney, green chutney, chaat masala and black salt as per taste. Serve with finely chopped, green coriander and pomegranate seeds.
